Direct sow chervil in cool soil in spring, with additional sowings through the season for a continuous harvest. Keep plants evenly moist and provide some afternoon shade as temperatures rise to help delay bolting. Harvest the tender outer leaves as needed and use them fresh in salads, egg dishes, soups, sauces, fish, poultry, and vegetables. Add chervil near the end of cooking whenever possible, as its delicate flavour is easily diminished by prolonged heat.
